As summer approaches, this is an excellent picnic alternative to the usual fried chicken and potato salad.

Without a doubt, the summer weather is arriving. Here in the northeast, we are finally getting temperatures where we can wear a t-shirt outside. And it’s supposed to be nearing 90-degrees today.

Picnics are in the air. So if you’re ready to get outside and enjoy one this weekend, you’ll need some new ideas for food. Throw out that old potato salad formula and go for this new chicken salad recipe by Southern Living. You’re going to fall in LOVE…

Never made chicken salad from scratch? After watching this 1-minute video, you’ll wonder why you’ve avoided it all your life. It really is that easy.

Start by cleaning 3lbs of chicken breast. Then put it in a pot and cover it with one can of chicken broth.

Cover the pot and bring it to a boil. When it boils, bring the temperature down to low and let it simmer with the top on.

Once it’s done, take it off the heat and remove the cooked chicken breasts and shred them.

Put all the shredded chicken into a bowl. Add in 1 cup of diced celery, ½ cup of water chestnuts, ½ cup diced red onion, ½ cup chopped red bell pepper, and ½ cup chopped yellow bell pepper, then stir.

Add red pepper, white pepper, and ½ tsp of salt to 3 cups of mayo and mix.

Pour the mayo onto the chicken and then stir to combine.
